The
Story of the ORIGINAL RAINBOW CONE
Joe Sapp, an orphan living on
a work farm as a child had a dream, to one day have a many
flavors of ice cream on one cone as he wanted. As an adult
he created the Rainbow Cone and in 1927, along with his wife
Katherine, opened his shop on the south side of Chicago.
The Original Rainbow Ice Cream Cone consists
of 5 flavors of ice cream. It is handmade and begins from the
bottom with chocolate, then strawberry. Next is Palmer House,
invented by Joe and named for the Palmer House Hotel in Chicago,
which is New York cherry with walnuts. Fourth is pistachio,
and finally-orange sherbet. The cone is created to look like
a rainbow. The original concept of the Rainbow, created in
1926, exists today. Rainbow celebrated its 82nd anniversary
in 2008. The tradition continues with the Granddaughter Lynn
Sapp, owner, and operating the business at the original location.

its product offering and bring the world renowned product
to its stores. This partnership not only brought the product
to the Rainbow faithful residing in the south-suburbs, but
also exposed a whole new younger generation to the Original
Rainbow Cone experience.”
